Mixology: Murgia Collins

Prendete il Gin Fizz ed aggiungete la ricetta segreta di un liquore aromatizzante pugliese; quello che avrete sarà il Murgia Collins, ideato in uno dei secret bar più famosi d’Italia: Lo Speakeasy di Bari.

Ideato cinque anni fa da Nicola Milella e Vincenzo Mazzilli, lo Speakeasy di Bari è il tipico bar che, appena entrato, ti riportamurgia-collins-by-speakeasy nell’America degli anni ’30; appena dopo il proibizionismo e subito prima della seconda guerra mondiale.

Non un vero e proprio secret bar (dato il suo affaccio sul mare), ma al suo interno nasconde una sorpresa: una saletta riservata a pochissimi ospiti e occultata da un finto armadio, dove gustare i classici cocktail che ripercorrono le epoche più significative della storia della mixology abbinati ad una cucina gourmet.

Da non trascurare il cambio di atmosfera: la saletta permette di allontanarsi dalla movida generata nella parte “pubblica” della location e di ascoltare, in sottofondo, le dolci note jazz, tipiche degli anni ruggenti.

Durante la mia visita ho avuto il piacere di gustare il suddetto Murgia Collins, preparato dal bartender Giuseppe Tatone che, di seguito, ci illustra la ricetta.

Il drink Murgia Collins è composto da Gin Hendrick’s, succo di limone, liquore pugliese al timo e soda. Si abbina a piatti di pesce, particolarmente consigliati tonno e salmone.

4 1/2 Gin Hendrick’s
1 1/2 Garìga – liquore al timo
2 cl succo di limone
Top soda

 

PROCEDIMENTO

Preparare direttamente nel bicchiere Collins, riempito con del ghiaccio, dopo aver shackerato gli ingredienti. Decorare con peel di limone e timo fresco della Murgia.

Created five years ago by Nicola Milella and Vincenzo Mazzilli, the Speakeasy Bari is the typical bar that takes you back in the ’30s; just after Prohibition and just before the Second World War.

Not a real secret bar (given its facing the sea), but inside hides a surprise: a room reserved for very few guests and concealed by a fake closet, where you can enjoy classic cocktails that trace the most significant periods of history of mixology combined with a gourmet kitchen.

Not be neglected the change of atmosphere: the room allows you to get away from the nightlife generated in the “public” part of the location and to hear, in the background, the gentle jazz notes, typical of the roaring twenties.

During my visit I had the pleasure of enjoying the aforementioned Murgia Collins, prepared by bartender Giuseppe Tatone that, below, shows us the recipe.

The drink Murgia Collins consists of Hendrick’s Gin, lemon juice, thyme Puglia liqueur and soda. It goes well with seafood, especially tuna and salmon.

MURGIA COLLINS

4 1/2 Gin Hendrick’s
1 1/2 Garìga – thyme liqueur
3/4 oz lemon juice
Top soda

 

PROCESS

Prepare directly in Collins glass filled with ice after you shaked ingredients. Garnish with lemon peel and fresh Murgia’s thyme.
